The other night, I was a fantastic wife. …until it all went wrong. Lol…
Adam gets home from work after I do, so in a perfect world I have dinner ready, the house clean, and the fireplace is alive and cracklin (well, if we had a fireplace..). Usually this doesn’t happen, but the other night I came close. By the time Adam got home I at least knew what I was going to make for dinner (2 points for me!), and the meal was one that you can’t even microwave (definitely 3 more points), also, it required chopping vegetables (I would have gained a bonus point for this, but Adam chopped the onion for me =)).
I planned on making Spaghetti Carbonara. (yes, I found the recipe on kraftfoods.com)

It looked super easy! Just cook the pasta (I could do that in my sleep), cook the bacon and onions (no prob), then mix it all together and add the ingredients for the sauce. Piece of cake! I didn’t give it a second thought. (I should note, this was my first attempt at making this recipe).
Things started to fall apart even before I started cooking. I had to read the steps at least 10 times because my mind had gone to bed for the night. Then, we dumped the onions and bacon in a pan, but there were too many onions so the bacon couldn’t cook. So I turned the heat up in an attempt to get rid of some of the liquid in the pan (combination bacon grease, and water from the onions), but that just burnt the onions.
I came to my senses, took the onions out of the pan, finished cooking the bacon, and just when I thought I had really saved the day, I discovered that I didn’t have Zesty Italian Dressing in my fridge. Are you kidding me??! I ALWAYS have Zesty Italian Dressing, I use it for tons of recipes… Yikes.
So I improvised. It’s been rare for me to have successful improvisation attempts. Once I tried to make something out of the small amount of food Adam and I had right after we moved. I quickly discovered that bowtie pasta, lemon pepper, olive oil, and canned roast beef don’t taste very good together… Lol! I’m embarrassed to even admit that!
My story does have an ending, and it’s a happy one. I mixed in seasonings, milk, and butter to my massive glob of pasta (an entire bag of pasta was way too much for the two of us). By the time I was finished, Adam said he was only going to try one fork full before he ate some off a plate (Lol.. That definitely isn’t a reflection of my improvisation skills…). I was really nervous to try some but…. It was really good!! Adam even ate a huge plate full!! Woohoo!!
So those of you who doubt my cooking skills, you have good reason… Lol, but you also have good reason to bet on my luck. Sometimes, even though everything is going wrong, it will work out in the end.
P.S. We still have mounds of leftovers if anyone wants some Spaghetti Surprise… =)
